Method:
Wash the potatoes
Put the potatoes in a pan with cold water and boil until they are soft.
Once soft remove the skin using a fork. Break the potatoes in pieces but not so they turn into mash.
Add salt and the mixture.
On a separate dish beat the eggs and if you wish you can add the milk.
Mix the potatoes with the eggs and stir gently.
Heat up the olive oil in a frying pan and add the omelette mix.
Once one side is cooked, turn the omelette around (you can use a plate to turn it around)
Observations: The above quantities are enough for a 26cm frying pan.You can use your imagination and add more ingredients in the mix, like cheese etc
