Cinnamon is a spice that comes from the inner bark of tropical trees. When the bark is removed and dried, it curls into 'sticks'. Its aromatic and warm flavour is perfect for sweet dishes like poached pears or custards but it's also fantastic in Asian, Middle Eastern and North African dishes like tagines and casseroles.
